Holiday Heart Healthy Blueberry Dessert
Dessert. So many people love desert! But is it healthy? Can we make it healthy? Can we make it healthy for our hearts and circulation? The answer is yes!! So put down that brownie and lets take a look at another delicious treat that has lots of nutritional value.
Blueberries, they are one of the best sources of antioxidants out there. They also have loads of Vitamin C. A fun way to enjoy blueberries this holiday season is in a pie! Lets get started.
First, get yourself a couple pre-made 9 inch pie crusts to have ready to go. Try to get one that’s not very sugary or make your own!
Ingredients:
1 1/2 pounds fresh or frozen organic blueberries
1/2 cup of an organic light brown sugar
Juice of 1/2 fresh organic lemon
1 teaspoon ground cinnamon (the fresher the better)
2 tablespoons cornstarch or arrowroot powder
2 tablespoons of cold water
1 baked pie crust ready to go
Instructions:
- Pour your blueberries into a large saucepan and cook over medium heat until they begin to boil. Watch to make sure they do not burn. Simmer gently for 10 minutes.
- Add your brown sugar, the fresh squeezed organic lemon juice, and cinnamon, and stir and cook for 2 more minutes.
- In a separate small bowl, mix in the cornstarch (or arrowroot) well with the water. After it’s mixed well, pour it into the simmering blueberries while stirring. Keep on cooking and stirring for a few more minutes until mixture becomes very thick. Continue to cook for 1 minute.
- Remove your blueberry mixture from heat and let it cool.
- Pour into a pie crust and refrigerate for at least 2 1/2 hours before serving.
Keep some whole blueberries and lemon wedges to serve on the side for added looks.
